Carino's Italian is a United States-based chain of Italian food casual dining restaurants. It has more than 170 restaurants with branches in about 30 states. Headquartered in Austin, Texas, the concept is owned by Fired Up, Inc., which was founded in 1997 by partners and former Brinker International executives Norman Abdallah and Creed Ford. Prior to 2006, restaurants were called Johnny Carino's Country Italian, Johnny Carino's Italian then changed to Carino's Italian Grill.
Asiago Smashed Potatoes
Carino's Asiago Smashed Potatoes
5 lbs red potatoes
1/2 cup olive oil
2 teaspoons salt
2 teaspoons black pepper
1 1/2 tablespoons fresh chopped rosemary
Sauce (per portion)
1/3 cup heavy cream
1 tablespoon Asiago cheese
Prepare a batch of roasted rosemary potatoes: Thoroughly wash potatoes under water. Cut potatoes into 1-2 inch sized wedges. Toss all ingredients in a mixing bowl and place potatoes evenly on sheet trays. Roast in an oven at 350 Degrees F for 30 minutes or until potatoes are tender and have a golden brown color. Make sure to stir the potatoes halfway through the cooking process. Remove from the oven and set aside.
Mash the potatoes and add sauce: (this part of the recipe is for one side portion) Place 1 cup of the the roasted potatoes into a zip-loc bag. Smash all of the potatoes in the bag with the heel of your hand to break up all the bigger lumps. To a heated saute pan, add potatoes and cream. Make sure that potatoes are fully heated. Fold in asiago cheese. (thickens quickly at this point).
