Carino's Italian is a United States-based chain of Italian food casual dining restaurants. It has more than 170 restaurants with branches in about 30 states. Headquartered in Austin, Texas, the concept is owned by Fired Up, Inc., which was founded in 1997 by partners and former Brinker International executives Norman Abdallah and Creed Ford. Prior to 2006, restaurants were called Johnny Carino's Country Italian, Johnny Carino's Italian then changed to Carino's Italian Grill.

Mascarpone Bread Pudding

Carino's Mascarpone Bread Pudding

Serves 6
 
8 ounces mascarpone cheese, softened
3 egg yolks
2 tablespoons Maraschino liqueur, divided
zest of 1 lemon
unsalted butter and sugar (for ramekins)
12 slices brioche bread
1/4 cup heavy cream
1/4 cup whole milk
confectioners' sugar for dusting


Preheat oven to 400 degrees. Cream half of the mascarpone with the egg yolks, 1 tablespoon Maraschino liqueur and the lemon zest. Generously butter six 3-inch ramekins, sprinkle with sugar, and tap out the excess. Place a round of buttered parchment paper in the bottom. Cut 12 disks of brioche bread the same size as the ramekins, and moisten with the cream. Place 1 round of brioche in each ramekin, and spread the mascarpone-egg mixture on top of the bread. Top each ramekin with a layer of brioche. Bake for 15 minutes.

Meanwhile, place the remaining half of the mascarpone in a bowl, and thin to a sauce consistency with the milk and the remaining 1 tablespoon Maraschino Liqueur. Spoon equal amounts of the sauce onto individual plates dusted with confectioners' sugar.

NOTES
Top with ice cream and caramel syrup.
