Carino's Italian is a United States-based chain of Italian food casual dining restaurants. It has more than 170 restaurants with branches in about 30 states. Headquartered in Austin, Texas, the concept is owned by Fired Up, Inc., which was founded in 1997 by partners and former Brinker International executives Norman Abdallah and Creed Ford. Prior to 2006, restaurants were called Johnny Carino's Country Italian, Johnny Carino's Italian then changed to Carino's Italian Grill.




Steamed Clams and Mussels

Steamed Clams and Mussels
Johnny Carino Recipe

Serves 4 - 6

24 fresh clams
18 fresh mussels
2 tablespoons extra virgin olive oil
1 teaspoon salt
5 garlic cloves minced
1 cup white wine
3 tablespoons fresh lemon juice
1/4 cup chopped parsley
1 cup diced tomato fresh
fresh basil sprigs

Clean clams and mussels by washing them and soaking them in water.  Into a large pot heat oil and add in garlic and sauté until garlic starts to become translucent. Add clams, mussels, wine, lemon juice, and simmer until clams and mussels open.  Add in diced tomato and cook another minute or two.    Add in chopped parsley and season with salt and black pepper to your taste. Place opened clams and mussels into a large bowl and serve with steamed brown or white rice.
