Carino's Italian is a United States-based chain of Italian food casual dining restaurants. It has more than 170 restaurants with branches in about 30 states. Headquartered in Austin, Texas, the concept is owned by Fired Up, Inc., which was founded in 1997 by partners and former Brinker International executives Norman Abdallah and Creed Ford. Prior to 2006, restaurants were called Johnny Carino's Country Italian, Johnny Carino's Italian then changed to Carino's Italian Grill.




Wild Mushroom Ravioli

Serves 4

Lemon Butter
1 lb. margarine
2 lb. butter
1/4 cup lemon juice
1/2 cup white wine
2 teaspoon chopped garlic

Ravioli and Sauce
1 oz. melted butter
1 cup sliced mushrooms
1/8 cup sun dried tomatoes
1/8 cup diced green onions
1/2 teaspoon salt, garlic salt, pepper
3 oz. Marsala wine
1 oz. heavy whipping cream
1/2 cup lemon butter
1/8 cup Parmesan cheese
15 precooked mushroom stuffed ravioli

Combine the ingredients for the lemon butter into a mixing bowl and beat at a medium speed until a smooth consistency in the batter is formed. Once combined, keep refrigerated until needed.

In a warm saute pan, combine 1 oz. melted butter, mushrooms, sun dried tomatoes, green onions, and spice mixture. Saute until mushrooms begin to brown.  Add Marsala Wine, and allow to reduce.
Add heavy cream and allow to boil, then remove from flame and fold in lemon butter.

In boiling water, cook mushroom ravioli, until an internal temperature of 165 degrees is reached.  Remove from water, strain remaining water off pasta and toss with sauteed ingredients. Pour into serving dish and garnish with shredded Parmesan cheese.
